Amaranth and Spaghetti

This recipe is egg free.

Preparation time 10 minutes
Cooking time 20 minutes
Serves 4-6 Serve with salad

Ingredients

1 x 250g (8.8oz) pkt Orgran Multigrain Pasta with Amaranth, Spirals, 400g (13oz) cooked pumpkin
2 x 220 (7.7oz) cans Orgran Spaghetti in Tomato Sauce
2 tablespoons Orgran 100% amaranth Puffed Breakfast Cereal
1 cup grated tasty cheddar cheese
¼ cup Orgran All Purpose crumbs

Method

  1. Preheat oven to 160°C (325°F).
  2. Prepare a large flat casserole dish by spraying with cooking spray.
  3. Cook pasta according to the directions on the packet. Spread cooked pasta over base of dish.
  4. Place pumpkin into a large bowl. Stir in spaghetti. Stir well to beak up pumpkin. Pour over pasta.
  5. Sprinkle amaranth over pumpkin and spaghetti.
  6. Sprinkle with cheese.
  7. Top with crumbs.
  8. Place into a moderate oven and bake for approx. 20 minutes or until heated through and brown on top.
